“A Mood”

Have you ever revisited a meal you used to have all the time?  A meal that you probably had at least twice a week for who knows how long and then all the sudden it just disappeared off the menu?

I did last night with a mini veggie casserole.  Or like the egg souffle I used to make  minus the cottage cheese.  Mostly because I didn’t have any on hand.

Anyways, this is how it all went down…

First, sautee an obnoxious amount of vegetables (assume the veggie to egg ratio will be off-balance).Then, whisk a whole egg plus an egg white with a little milk and realize yes, you were right, the veggie to egg ratio is off.Pour it all into a ramekin.  You get bonus points if your ramekins are from 1980 or older- gotta love the 70′s flower power designs.  ;) Bake at 375 degrees until the egg has set and is maybe a little browned on top (depends on your oven, but mine was baking for a little over 20 minutes).  That’s your cue to add a mini corn muffin and some extra parmesan cheese as a topping.  Turn the oven off, and throw the ramekin back in for another 5 minutes or so.  Preciseness has never been my strong point when it comes to cooking. This shortcoming has rarely bothered me. Sometimes red wine goes with everything.  And clearly I had some before I sat down for dinner and Modern Family.  Sometimes I’m very impatient.

I used to never be a big red wine drinker.  But it has recently replaced white wine when I’m in “a mood”.

Running often helps pull me out of “a mood”.  But the workout room was busy (because of the size of my apartment’s work out room, 5 people would qualify as “busy”) and I got stuck on the obnoxiously loud treadmill.  The loud treadmill really messes with a girl.  It makes you want to go faster to get the run done and get off.  But, at the same time, you’d almost prefer to run slower because the faster you go, the noisier it gets.  Blah.  It’s hard for me to get annoyed by the good treadmill already being taken. Even if it is being used by the slowest walking person of all time.  I know I take up a lot of time on that thing.  So I try to be patient.  But you can guarantee that within 15 seconds of Mr. Slow Walker stepping off that treadmill, I had already stopped the monster I was on, jumped onto the good treadmill (or as I like to call it- MY treadmill), and was off and running.

Most of the people who frequent my gym know I do serious time on it, so I’m pretty they were all breathing a sigh of relief that I switched ‘mills and that they weren’t risking hearing loss by continuing to be there.

I’m not kidding.  The second treadmill is THAT loud.

Rant over.  I got my 5 miles in.  So I won’t complain anymore.

Oh and because I did the mid-run switcheroo, I’m totally guessing, but I’m pretty sure my pace was a little under 8:25 if my math skills serve me correctly.

Either way, I’m really glad I’ve been keeping at 5-mile runs during the week.  It makes me feel my rest day today is well deserved!  Now if only I’d be as focused about upping my game with the weights…

Bulking Up

So I’m not the only one who hoards leftover office food, huh?  Good thing we don’t all work together- I’d hate to fight you guys for it.

Because I fight dirty.  And I’m not scared.  Bring it.

Don’t believe me?  You should.  I’ve been working on my guns.  Well- sort of.  I’ve been loving using resistance bands during my workout as part of my cross training routine.  I may have mentioned it already- but doing the front body circuit is my favorite.  So I spend some time doing work on the arms, shoulders, and even the core.  Loves it.

So I did that, but also hit the gym beforehand for some elliptical and stairmill time.  Kept myself entertained in the workout room this time by playing “where is that cheap cologne smell coming from?”

I still don’t know.

Then I did some more bulking up.  With my dinner.90 calories a serving?  Sweet… that’ll keep me full for like a whole 15 minutes!  Like oh my god! I actually took two pics of the same thing- because I caught myself doing a sweet hitchhiker’s thumb and was kinda embarrassed.  Then I laughed.  Try and beat that one, people!  I think my thumbnail makes it look that much longer… Awesome.

But yes, we can take a minute to talk about my soup in a can.  I love playing in the kitchen, and I know soup isn’t hard, but I’m just not “there” yet.  I still only keep a few cans of it around as an easy option.  I know it’s a bit high on the sodium end, but I don’t know what to say- I just don’t like making soup from scratch.

Anyhoo, I took the can and used it as a “base”.  Then I added the goods.  Like broccoli, black beans, and corn.  And red chili pepper flakes.  And pepper (because we know how almost all “lite” soups are pretty freakin’ bland).  I must have gotten a little out of control because it was exploding out of the pot…I SLOWLY stirred it until it was all heated up and ready to go.  And then toasted an Arnold’s thin (still living on coupons from the Healthy Living Summit- holla’) with cheese on top.  Because soup isn’t comfort food without cheesy bread.  I don’t care what you say.  I need my cheesy bread.Voila.  Just in time for Modern Family.

I have fantastic timing.

Being as how it’s Thursday, today is an official rest day for me.  Again- probably for the better.  I still haven’t figured out that “weird” feeling in my left leg.  It doesn’t hurt.  It’s just annoying me.  Grrr.  My real frustration comes from the fact that I’m a little over a month away from my 15k, and have yet to really log much over a 6-mile distance as of late.  Gah.

Here’s something funny…

Has anyone heard of the Happy Meal Project?  An artist out of New York, Sally Davies, photographed a McDonald’s happy meal every single day over a period of MONTHS.  Results?  I believe she’s still doing it, but they had pictures of Day 1 compared to Day 137- with very little change of appearance.  What?? (Click on the picture to be taken to the article and slideshow)

Now- let me be clear.  I’m a kid who runs through the drive thru every now and then.  I see nothing wrong with that.  But um… I’m concerned about people who eat this every day.  I mean, it looks like you could still eat the bread- which seems to be mold free after 137 days (another reason why I’m frustrated my lastest wraps purchase didn’t even last but a week!).  Yikes.

Thoughts?

Double Dipping

Hey kids!  Happy Monday!  I’m extremely sleepy after a long weekend at the Healthy Living Summit, but it was totally worth it.  I’m sure some ladies would completely agree with me…

After I got back home and resituated myself, along with feeding my poor empty refrigerator, I made a short drive over to my lovely friend Annie’s.  We had a planned little workout sesh on a trail near her place to celebrate the fact we’re doing an 8k together in September!  If you remember, we did the Run For the Cheetah 5k back in April, and have been looking for another good race to fit into both of our schedules.  Annie found this 8k that looks doable and so we’re planning on signing up (more on it later).

Anyhoo, yes I went for another round of running after my 5k blogger fun run.  Yep, I double dipped into the running pool.  And the weather was AMAZING.  I had no idea the cool down was coming, but running in mid to high 70′s was greatly appreciated!Clearly we were overjoyed.  It’s also clear I should have paid more attention to the blogger photography session I attended at HLS.  Sorry everyone, the sun also wanted to say hello…

We did a solid two miles, walked a mile, then decided to finish strong with running the last mile back to the car.  Because we have very different schedules, we don’t get to workout together much, but I always love when we do because it gives us time to catch up and gossip a bit about what’s going on.

Since we both love cooking, half the fun of working out is the dinner we make afterwards.  This time, Annie was prepared ahead of time, so when we got back to her house, it didn’t take long for her to come up with serious good eats:Isn’t she a sweetheart?  She prepares it beautifully and breaks out the nice plates when I’m around. If anything, nice plates should always make you feel special.  :) Annie made wild rice with veggies with a honey and almond oil sauce mixed in.  All on a bed of spinach and a side of broccoli and topped with a little feta.  Fabulous.

On a side note, Lindsey over at Goodies Galore asked me over the weekend at the Summit if I was still on my major broccoli kick.  And because I’m sure everyone else is also concerned- yes, it’s still kicking.  Even in the background in meals I don’t post about.  There’s no such thing as too much green.  :)  Can I get an amen?

Anyone else on a serious food kick of some sort?

Finally, if you notice on the side bar, I joined twitter again!  I had a personal account forever ago, but didn’t do much with it.  Now, I’m excited to be tweeting again (so add me if you’d like!), but give me a little time- I’m still very much a newbie.  There’s probably a twitter term for it.  But I wouldn’t know.  Aaaahhhh technology….

Another technology issue?  I left my phone charger at the hotel.  I notice this when my phone is giving me the dead battery angry blinking sign.  You don’t even want to know how much anxiety this gives me.  Blah!  I feel like a part of my life is missing.  Looks like I’m running errands at lunch today…

Ok everyone, it’s time to get to work.  I hope everyone had a great weekend (tell me about it!) and that the week won’t be TOO painful… ;)

Bikram Elliptical

Oh hey hump day- you got here quickly!

Last night was quite the event.  I got to the gym and several peeps were already there sweating it out.  And I mean SWEATING it out.  The air conditioning wasn’t working.  I asked Mon if they already reported it.  She had, but the girl hadn’t done anything yet.

Well.  This looks like it’ll be a short cross training session.

Someone came in after a little while.  Apparently the filter in the AC had been ignored for, oh I dunno, what looked to be about 5 years.  Gross.  I watched as I poured buckets of sweat all over the elliptical.  “What if this thing shorts out while I’m on it?” I thought.  Finally, the air started flowing again.  Bu the damage was done.  I looked like I had jumped into the pool.  I guess that’s what I get for starting my workout in a sweat box… oops.

It did end up being a decent workout.  I just moved a little more slowly than usual.  At some point I just took my shirt off.  I figured I could use the few dry spots left on it as a towel if need be.  I’m not really sure if the people working in the clubhouse and giving tours to future residents appreciated this.  But then again I didn’t appreciate sweating like a pig as soon as I walked through the door.  Fair enough.

After drinking about 10 gallons of water and taking a seriously needed shower, I finally felt hydrated and sanitary enough to do my thing in the kitchen.  Because I’m a sucker for a sale (and I had a coupon on top of it all!), I stocked up on chicken to eat/freeze on my last trip to the grocery store.  So tonight I had some while it was still “fresh”.  It took forever for me to decide what to do with it.  And I still hadn’t really decided what to do with it when I was halfway through constructing my sandwich.  Damn commitment issues…

But this is what I came up with:Doesn’t it look like my sandwich has fangs???  Raaarrrrrr!!!!

Sorry. I swear I’m 24…Money shot.

Anyways, it’s a chipotle chicken sandwich with a bit of melted mozzarella and orange peppers on top.  Squash and mushrooms on the side again.  Originally I was going to work them into the sandwich as well, but that may have just been excessive if we’re going to be completely honest about it…  :)

And wine.  We’ll just say it was necessary.  That is all.

Because I’m working late today, I decided to get up early again to do some shredding.  Good morning Jillian.  I appreciate you.  I appreciate you.  I appreciate you…

Sometimes at 5:45 in the morning (like today), I have to repeat it a few times in order to believe it.  All whining set aside, I really do like doing quick sessions in the morning.  It gets me going without that extra cup of coffee in the morning and gives me some more time in the evening.  I have no desire to do it everyday, but a couple times a week isn’t hurting anything.  :)

My 5-mile run tonight is being planned on the dreadmill.  :(  Although the weather man has been completely wrong for the last 3 days about the rain, I can’t bank on it.  He swears today is the day it’s actually going to rain.  Well… ok… if you say so…

Have you been doing most of your workouts inside or outside these days?  I know it’s been rough for some of you kids up near the east coast with those 100-degree temps… ouch!

Um… I guess I should make it a point here to say drink some water and wear your sunscreen?  That’s my public service announcement of the day.

Later, kiddos!

Not what I expected.

I made my way over to the forest preserve for a run yesterday afternoon.  Being the gorgeous day that it was, it was crazy crowded.  But I was determined to run- dodging the walkers, children, bikers, rollerbladers, dogs, scooters… am I missing anybody?  Please holler if I am.

I ran a little under 2.5 miles at about an 8:35 pace.  This was the most I’ve ran since the last 5k I did.  So I guess it’s not bad.  My leg feels good.  But I was a little disappointed with the pace considering I had done 8:09 miles for the race.  I understand it’s a little different atmosphere and running by myself doesn’t quite give me that competitive attitude.  But still.  I just always feel like I’m having to start completely over!  I just hope that I’m not going to have any more leg problems from here on out.  I have a half to train for!

I also stretched it out with some Fitness Fusion yoga after the run.  But that was pretty uneventful.

Dinner, however, was not.  I broke out the chicken for this one.  Most of my days have been meatless as of late (with exception to the tuna), so I figured it might be time to get a different source of protein in my life.  Since I don’t have a grill, much to my dismay, I have to improvise.  Baked BBQ chicken sandwich anyone?I also threw in some aged white cheddar for good measure.  Other than feta, white cheddar is one of my favorites.  I like cheese that has a really strong flavor- otherwise, what’s the point?  The one exception is blue cheese.  Even though I’ve tried many times to like it, we just don’t get along.  Anyone else have a good favorite?  Or one you despise?

Mon and I decided it was high time we had a Sunday Funday.  We had been counteracting the suckiness of Tuesdays as of late, but we really wanted an excuse to see Kick-Ass sooner than later.  Usually I don’t participate in funding Nicholas Cage’s horrid acting quests, but the fact McLovin’ was in it balanced out my decision.

Um… wow.  The movie… uh… Do you know how Pineapple Express looked like it was going to be just a funny, light-hearted comedy about two dumb but lovable stoners then actually it was bloody and just weird?  That’s how Kick-Ass was.  I expected it to be about this nerdy kid who tries to fight crime.  With laughs.  And silliness.  Um.  Nope.  I’m hoping that’s what all the parents were thinking too when they brought their little boys with them to see the movie.  I’m actually judging a little that they even did that because the movie was rated “R” and called “Kick-Ass”.  Curse words don’t really bother me too much- but when I’m aware of younger ears in the theater, I get a little upset.  Same with when people’s heads are getting shot through.  I can’t even watch it- so why is an 11-year-old able to?  I dunno.  The movie itself was ok.  And there are funny parts.  But overall I didn’t really like it- not my thing.  And Nicholas Cage is still just creepy.  But that’s just my opinion.  Take it or leave it.

Today is the first day Jaime is back from her destination wedding.  I hope that means low stress at the office.  But it’s Monday, so I guess that would be wishful thinking.  We shall see…

A Half Mile

That’s all I did after work today.  Bummer.  After walking Princess and Hazel, I was ready to stretch my legs and go.  So I got myself ready, did a little warm up walk, and started my run through the neighborhood.

Nope.  It was almost instant that I knew I wasn’t ready yet.  Stupid twinge.  Sure, I ran through the feeling during the Shamrock Shuffle and Run for the Cheetah.  But I also spent days after both runs not feeling so hot.  So I stopped.  Stupid leg.  I don’t understand why you are doing this!  We’re in a fight.  I’ll be back to talk to you next week.

The thing I don’t understand is that it’s all during running.  I reluctantly walked the rest of the way home (it’s not like I got that far anyways).  And popped in The Shred.  The cardio portions of the workout don’t seem to stress it the same way.  So in theory, it’s good that I can do that with no problems.  In my head that means it can’t be nearly as bad as it was.  So I’ll rest some more.  Next week maybe.  Hopefully.  It better be.

After shredding, it was time for eats.  I bought an avocado and waited patiently for it to be ripe enough to use.  Tonight was the night!  Avocado and mushroom sandwich time!!!And oh yeah… the zucchini was awesome, too.  But not the star of the show.  Clearly. So to address the commute.  I don’t mind going to work everyday.  Wrigleyville is seriously so quiet when I’m on the road.  Maybe it’s just because I’m always up way too early.  But still, it’s a nice and calm drive.  And I get to say hello to this legendary building:Rough start, huh boys?  Keep your chin up!

So the drive TO work isn’t bad.  The drive from work?  Gah.  I’ve tried a couple different ways home.  They all blow.  Which makes me not look forward to next week when the Cubbies are actually in town. I am stalked by red lights.  Hounded by other vehicles cutting into my lane.  Cursed by random construction.  Why, Chicago?  Why?!?!

Oh and an update on the furniture front.  Looks like I might be trying to work out a deal with that sectional I showed you guys earlier.  Of course, I’m getting one last good look at it.  And getting an in-store second opinion from Mon over the weekend.  I’m also appreciative of all the comments that you guys liked it.  This could be the one.  Cross your fingers.  I’m in it for the long haul.  Hey sectional- let’s get to know each other better…  (play sexy music if you so desire)

Because I’m in a funny mood today, I’ll show you a cartoon I happened to crack up at because I absolutely LOVE Reese’s candy in any shape or form.  Mini reese’s pb cups are by far the best, but I’m flexible.Ok kids, have a good one.  The weekend’s almost here!

Hangin’ With The New Roomies

Well, I made it through the first day.  Good to hear, right?  The work day was hectic, but not awful (considering we’re short-staffed).  The commute was… uh… we’ll talk about the commute at a later time.  I still have to fully assess the situation.  But I made it to my temporary home in one piece!  Success!

I heard the little doggies barking as I let myself in.  Then they stopped… stared… and were confused.  Probably not the person they were expecting.  Hey girls… heeeeeyyyyy!

Either way, they may have been a little timid at first, but were all about the walk when I looked at them and went “are ya ready?!?!”  One of the neighbors recognized the dogs.  “Aren’t you getting married soon?  That must be coming up!”  Um… no, that would be Jaime… she’s blonde.  And four or five inches shorter… I found it funny she recognized the dogs but didn’t realize I wasn’t the owner.

When we got back, it was time for rest.  So I took it as a chance to get a good pic.  Say hello to my new roommates for the next couple of weeks! The sassy blondish one is Hazel.  She’s a yorkie-shih tzu.  The exotic darker lady is Princess- a yorkie-poo.  They will most likely be the guest stars of the blog sporadically over the next two weeks.

They watched in confusion as I worked in the kitchen to make dinner.  Jaime and Scott aren’t so much on the cooking- more on the carryout.  And yes, Jaime, the stove works great!  (It was broken for a few months before they got it fixed)

I made myself some Trader Joe’s pizza on a pita:Spinach, zucchini, and mushrooms with a little feta… This girl had a happy tummy.  :)  And check out the sweet glass- we’re not in Cardinal territory anymore, are we?  Not everyone is a fan of the cubs, but we all love Harry Caray! Holla’!Back off girl… don’t touch my eats!

By the way, I think they’re warming up to the idea of having me around for a while.  Princess farted on me while I was catching up on the blogs with her in my lap.  And if one person is comfortable enough in a relationship to do that, I guess we’re doing good…

I also learned the word “outside” creates chaos in the household.

Oh and I feel kind of bad.  There is another roommate that almost got looked over.  But that doesn’t mean he’s any less important.  Hey everyone- meet “fishy”.Fishy is the quiet, dark and mysterious type.  He likes being that way.  So I won’t say too much about him. As to respect his dark demeanor.

Anyways… the rest of the night was spent getting used to my surroundings.  And chilling with the girls on the couch while watching Big Bang Theory.  We talked about it as a group and decided we all love Sheldon equally.

I didn’t sleep well.  But I think a lot of that comes from being in a new place.  That shouldn’t be an issue tonight being as how I’m a weeeee bit sleepy.

Yesterday was a rest day.  Unless you count the strength training aka three trips down my apartment and then up Jaime’s apartment stairs with heavy luggage (ok, so it was clothes and shoes- but dude, that’s heavy).  I need to figure out a workout for the night.  The Shred is doable.  But I need a yoga mat… hardwood floors are not so good for my back in my old age… ;)  A lunch spent at Target (and the gods rejoice!) may be necessary.

Delivery Day Disaster

Ugh.  Where do I even start?  Well, how about here:I waited patiently.  Starting at 10:00.  And even at 1:00.  And even when they called me at 1:30 to let me know the delivery guys were running at least an hour late.  I was nice.  And patient. And said, “oh that’s ok… I’ll just be here.”  So I ate lunch and watched some of the Cubs game. They showed up at about 2:20.  And threw a fit when they realized I was on the third floor.  Which is whatever- I told the lady when I bought the furniture.  It shouldn’t have been a surprise.  I think they still cursed me in Spanish. And then said they could bring up the dining set.  But the sofa wouldn’t go up the stairwell.  Yes, I’m aware of that.  It’s 8 1/2 feet long.  I knew it wouldn’t go that way.  I told the lady when my card was swiped- I think they’ll have to take it through the balcony.  This isn’t that crazy.  I’ve talked to people who have done it.  And also talked to my building management- and they said that people do that often.  But these guys wouldn’t.  I understood there was only two of them- but I had warned them and they should have had more people.

So they didn’t even move the sofa off the truck.  They called the furniture store and we all talked and I ended up having to take a trip there after they left to talk to customer service.  Apparently, it’s even against their company policy to do deliveries that way.  “But I told her,” I said, “and she said they can take care of it and they’re really good at what they do.”  I guess the sales woman shouldn’t have told me that.  So they tried to talk more to the delivery guys to see what they could do.  They wouldn’t do anything.

So my options?  I don’t have many.  I now have a credit at said furniture store (hello Value City- you suck).  So I can get a smaller sofa.  I don’t want a smaller sofa.  A smaller sofa would be fine.  If I were 5’2.  But I’m 5’8.  And I don’t think it’s a huge request for me to want a sofa I can comfortably stretch out on.  I refuse to get one that is the size of my old futon (that had gotten stuck in the stairwell when we moved it in).  My thought is I’ll see what I can do with a sectional that comes in several pieces.  I’m hoping, if necessary, they’ll work with me a little in price so I don’t have to spend more than I already have.  And deliver it at no cost- since they technically didn’t do my whole delivery that I paid for yesterday.

I decided I’d look today.  As to calm down a little before I go in.  And it’s not like it makes that much of a difference- I couldn’t have it delivered anymore yesterday anyways.  Maybe that’s a plus that I’ll be gone for two weeks- I won’t be living in a sofa-less apartment.  Now I just have to figure out a delivery time that works again… because it took three weeks to get the one I had yesterday.  Ugh.

On a happier note, my table is here.At least I have a place to sit, right?  Ha…Sigh… nothing’s easy… but I’ll grin and bear it.

I did get a bit of an elliptical workout after everything was said and done.  So that’s cool.  I needed to counteract that decadent breakfast I had earlier.  ;)  And I still got to have dinner at my new table.Egg sammy and iced tea!  Awesome.

So that’s where I am at the moment.  Frustrated.  But I’ve got to get moving.  Errands to run, two weeks worth of packing to do and more furniture shopping.  Yikes.

Get It Together

Mother Nature can be quite the diva.  This weather that’s all over the place is not doing a thing for my cheery spring behavior.  Yesterday hit around 40 degrees for a high.  What?!?  Figure it out, woman!  You’re acting like a hot mess and really need to get it together.

Needless to say, I postponed the trail run.  It was 4oish degrees which was whatever- that wasn’t so much the issue.  But it was rainy.  And the cloud coverage was creating early darkness.  Not so ideal when you’re planning to run a trail where there are no street lights.  Let’s see how today goes.

Since I had decided I was just fine to run, I decided that I was just as capable to get back to some oldies that I miss.  Like The Shred.  Hello Jillian, long time no see.  I did Level 1 because it had been a few weeks.  And it was great.  Although I think I could have done Level 2 without a problem.  Level 1 didn’t leave me all hot and bothered like the first time I started up this work out (that’s what she said- you knew it was coming…), so next time I’ll take it up a notch.

As I was doing one of the cardio intervals, I thought, “oh god, what if I’m making all this racket and hottie neighbor guy lives right below me?!?!  How embaressing!”  Then I thought, “well I wish this racket would at least piss him off enough to come up to see what is going on… maybe I should try and be louder.”

Clearly I’m still waiting to run into him again… what is he?  A hermit?  Get out of your apartment, sir!

After that, I continued my veggie-rific week:Usually I don’t play around too much with spinach.  But we’ve been friends since the pizza goodness it provided.  So I made a mushroom and spinach sandwich.  It’s pretty.  But not functional.  Should have had a wrap or pita for this one.  You win some, you lose some…

Breakfast was another bittersweet one:I finished off the last of the sunflower seed butter.  Originally I didn’t like it as much, but now I’m sad it’s gone and will most likely go to Trader Joe’s again and sell a kidney for a case of this stuff.  Actually, a kidney is probably worth two cases.  The stronger flavor it has over peanut butter makes me really like it (uh… especially when mixed with chocolate).  Has anyone else tried it?  Just a warning- I have a feeling it’s one of those things that you’ll either love or hate.

Oh and the zit is retreating.  I taught him who was boss with half of a tube of zit zap.  Yeah, my zit was a “him”.  Ass…

Listen to me- I’m sassy today!

Happy Friday everyone!  I’m hoping to have a workout of some sort before calling it a night.  Or going out for a drinky drink… not sure yet.  I’m not feeling my usual “oh my goodness all I want to do is go home and pass out” self today.  But it’s still early.  No promises.

New Things

Well Saturday was fun.

I went out furniture shopping (browsing) again.  After measuring the beloved table in the store, and going back home to assess the situation, I realized it may still be too big.  It would work logistically, but I don’t think I’d be happy with it because it would still look “crowded”.  That being said, I’m going to keep you guessing until the furniture I selected are in my apartment, but I will tell you I am in love.  ;)  I’m sure you can’t wait…

After I got home, I was out on my balcony to enjoy the sun and chit chat on the phone.  I spied my hottie neighbor.  I’m pretty sure he’s somewhat new to the complex.  Either that or I’m just horribly unobservant.  Which, in this case would be a shame.  I’ll have to make a point of introducing myself.  I suck at that.  But whatever- it needs to happen.  It’s springtime and I want to be twitterpated (anyone catch that Bambi reference?).

Another new thing?  Dinner… I decided to break out more chicken and try a new recipe.  I found a simple white cheddar sauce to go with my chicken I seasoned with TJ’s 21 Seasoning Salute.  I now consider this seasoning to be a staple in my spice rack.  Seriously.  Don’t have it?  Go get some now.  And use it on almost anything you cook on your stove top.  See what happens.  Appreciate it.  Love it.I wasn’t, however, so hot on the white cheddar sauce.  I was really excited to try it.  Cheesy wonderfulness on chicken?  Sign me up!  But it was pretty basic and bland.  :(  It needed some more kick- hence the reason I won’t post the recipe and tell you to try it immediately.  I’m going to start looking for something similar in the cheesiness, but way better.  I’ll let you know when I find it…

Oh, and the above chicken started out as one chicken breast.  But I’m one of those people who totally freaks out about cooking meat and have to make sure it’s completely done.  So usually, the one piece turns into strips by the time I’m through with it.  No chance of pinkness inside- something I’m soooo anal about!  Is that just me?  Probably…

I watched a new tv show- Jaime Oliver’s Food Revolution.  He’s tackling the diet issues of a town in Virginia and the first two episodes have revolved mostly on the school he’s been working with.  My hands seriously went up to my face when he showed the family what their diet was by piling it all on the kitchen table.  Holy fried crap and cheese!  I’ve started to become very intrigued by all the school lunch program reform that has been going on and support it completely!  I know you remember just as I do what kind of crap ended up on your school tray at lunch.  What’s the worst one that you’ve got?  Mine was stromboli (I still don’t really know what that’s supposed to be)- I hated the smell of the cafeteria on those days.  Sometimes, I’d eat the bread part of it if I was hungry enough- but wouldn’t touch that thick and fatty slice of “meat” wrapped in.  I’m gagging a little just thinking about it.

In my nerdy weekend fashion, I totally enjoyed my breakfast out of one of my NEW bowls. It’s also another solid steel cut oats attempt.  I think I’m finally getting the hang of it…  And I know it’s funny to get excited about something as silly as a bowl, but it just made my meal seem so pretty!

Who needs another cup of coffee?  I do!  I do!I haven’t had enough coffee until my eyes are completely bugging out… clearly, I’m close.  Have a good Sunday, kids!
