Smug Omelet

One day down, four to go.  How ya’ doin’?  Hanging in there?

Yeah… me too. Meh.

Since it’s Tuesday, and I generally dislike Tuesdays, I figured it was a good time to mention my big accomplishment that made me feel pretty awesome on Monday.

For the first time ever…

Are you ready for this?

I made my first real omelet!

*Crickets*

Ok guys, listen- this is a pretty big deal for me.  Ages ago, I figured this was just one of the few things out of my skill set.  Like advanced statistics. Riding a unicycle. Or ice sculpting.

Time after time, they’d just turn into scrambled eggs.  Which was fine.  I don’t want to denounce the greatness of an egg scramble (even though a 5-year-old can probably make them with proper adult supervision).

But I wanted more.  Needed more.

Turns out I just needed to make bigger omelets.

Or acquire a smaller pan.Pretty in pink. 

I was going to scramble the eggs (as usual), but realized with my smaller pan (an extra 8-inch my mom let me take while I was home over the holidays), the impossible may actually be possible.

And hot damn, it was!If you ever went to know how to feel incredibly smug at 5:50 in the morning, make an omelet.  Then put cheddar and sour cream on it because, by all means, you deserve it.

As I predicted early yesterday morning, it was definitely time for a rest day.

Even if I weren’t a little sore from Jillain’s NMTZ, I was just dead tired after work.

Plus, How I Met Your Mother was new.  The choice wasn’t difficult.

A little rest does amazing things.

But today is a new day.  I’m not sore. There’s nothing on tv. Hopefully there’s no one on *my* treadmill.  Because I need to do some WORK.

  4. Oh heck yeah! I can’t make an omelet for the life of me. Scrambles, sure, frittata-like things, kinda, but the flippy-omelet deal is not my specialty. I get too worried about it burning. But even an omelet success might not make me smug at 5:50 a.m. Is that really when you eat breakfast? SO EARLY FOR MEALTIME.

  6. I cannot for the life of me make a decent omelet either. Yours looks professional. Way to go. Mine also turn into scrambled eggs. And now that I got stainless steel pots I’m pretty sure it’ll never happen. If I can’t do it with nonstick…

  7. This deserves a big, CONGRATS girl! My omelets always turn into big scrambled messes, but you give me hope. Just gotta stick with it!!

  11. Congratulations on the omelet! I knew you could do it! I have found that it helps it cook too when you put a lid on it. It will puff up a little too. We make a lot of omelets here. It is a staple. Have a great Tuesday Amy! I have no doubt you will after starting it this way!

  13. You crack me up with YOUR treadmill. But I totally know what you mean. There’s always someone on the stairmaster at my parent’s gym and I get ticked! I’m rarely in town long enough to workout, and when I am, I want to change things up and get on the stairmaster, darn it!!!

    The omlet looks fabulous! I meant to make eggs this morning, but then I lost track of time catching up with blogs… :)

  15. I’ve had omelet issues as well – same thing, the size of the pan makes it difficult. I’ve had a few minor successes over the past few years, but I realize I need a really great-sized pan to make this a more consistent happening. You are not alone.

  16. yay omelets. i’ve never tried making one myself. but that’s mostly because i like having people cater to me ;)

    and i’m starting to dislike tuesdays as well. i partly blame you and partly blame the tempos i do on tuesdays…

  17. I’ve never made a real omelet ever…any secrets you can share? It’s a major source of insecurity for me in the kitchen. Dinner for 25? No problem. Flat eggs? Curse words flying everywhere.

  18. I don’t eat eggs so when I was able to make my hubby a perfect over-easy egg, I felt like King of the World ;)

  19. You know what? I don’t think I’ve ever made an omelet either. I just make scrambled eggs. I always order omelets in restaurants but I’ve never actually tried to do it myself!

  20. That omelet is on PAR, girl! The sour cream and cheese just add to the awesomeness of the omelet :) Omelets are pretty hard to make…seriously!

  21. that is one beautiful omelet amy!! i luurve making a pretty omelet – such a sense of accomplishment, no?? i dont know if you did this but once i discovered how easy a spatula makes the whole process i’ve never had a broken omelet since!

    um omelets I can never do. i have a fear that by folding it in half, the middle wont cook all the way and nothing is worse than raw eggs…barf alert.

  23. My mom taught me to put my pan in the oven for a few minutes and broil the top of the omelette! Before she showed me that I SUCKED at making omelettes too – scrambled eggs every time!

  24. I’m with you- it was only recently that I discovered how to make omelettes, and usually I just get too impatient and end up scrambling them. I’ve actually gotten pretty good at flipping fried eggs, though. It’s a rare skill, I know. PS, I thought you NEVER had sour cream in the house! ;)

  26. Congrats on your omelette! I remember making my first one and I was so proud. I’ve progressed just a tiny bit in that now I can actually flip it without everything falling to pieces!! And says my cooking hasn’t evolved??

  30. Omelets, frittatas, quiches….I was scared of them all until recently. For some reason, the eggs are so intimidating? Hmmm, I clearly have issues. They are quite delicious, though! But I still think they are better when someone else (other than myself) makes them.

  36. Omelets are one of my favorite lazy/cheap meals. I think I ate one almost every day in college.

  37. Woo hoo for the omelet! I’ve stopped trying because I get my hopes up and then fail, it sucks. What also sucks? Tuesdays. Today was completely meh but tomorrow is Wednesday which means Modern Family!

  40. My Tuesday was definitely meh – glad it’s over! I rarely make omelets, actually, but that looks lovely. They are kind of intimidating – if I do make them they usually turn into a frustrated scrambled egg of sorts :)
