Housewarming Treats

Round 2 of baking for the month.  Anyone tired of it yet?  I’m not…  nor am I close to being done!

My lovely friend Jaime is having a housewarming party/Labor Day Weekend bash this weekend.  So I said I’d bring something over.  Dessert of course.  Because that’s my thing. 

Do you have a “thing” that you always bring to parties?  Usually, I would say “yeah, I AM the party”, but when I’m not being a total snot, I bring the sugary goodness.  (That’s what she said would go here nicely, but I won’t do it!)

I considered bring my standard batch of scotcheroos (which I’ve seen around the blogs with a different name- it’s basically a rice krispie treat with peanut butter instead of marshmallow with chocolate/butterscotch on top).  But then I saw Andrea make Chocolate Toffee Almond Bars a few weeks ago and I had to have them.

Now, if you’ve never checked out her blog, Can You Stay For Dinner, you probably should.  She makes some of the most decadent and wonderful dishes- and I browse her eats regularly for inspiration for future dishes/baking.  Wonderful.  Seriously.

Mon, of course, came over to supervise.  This was after a facebook conversation where we realized we were both just sitting there on facebook, cranky, and with a glass of wine in our hands.  Being as how we were cranky, combining efforts was dangerous (we’re both Leo’s- sassy spitfire, anyone?), but we decided to give it a go.  *No one died in the making of these cookie bars.

The thing I loved about this recipe is how simple it was!  A kid could learn to walk, stroll into the kitchen, and make this almost flawlessly.  With adult supervision, of course. It was a matter of making the crust and throwing all the deliciousness on top. Then covering it in sweetened condensed milk.  Sweetened condensed milk is one of my favorites to bake with- it makes any dessert absolutely decadent.  And I’d get excited every time my mom would pull it out in her adventures in the kitchen.  Ahhhh…. 

I doubled her original recipe so that it fit in a 9×13 pan- otherwise use an 8×8.  I also baked it a little longer than her 30 – 40 minutes because it was much bigger.

Mon and I patiently waited for it to cool.  And then said screw it.  When she says “let cool in the refrigerator for 4 hours”, she really does mean “keep your grubby hands off the dessert for only 4 hours you ridiculous sugar obsessed child”.  But we wanted a taste.  So we scooped it out. Fabulous.  Messy, but still good.  The pic is a little blurry.  I could blame the wine, but I’m sure it was just me not wanting to wait any longer to try it out.  Here they are today all cut and ready to go:Since it’s a casual party, I just stuffed them into mini cupcake liners to make them easy to pick up.  No need to be messy.  :)  Plus, they’re super rich- so the “two-bite” size should be perfect!

Time for me to go on a run.  Gotta get it in quickly because kick-off for the Mizzou game is in less than 3 hours!  Go Mizzou!!!

  10. I would love it if you brought these over to my house! What a simple yet decadent dessert. I would have a hard time eating just one or two…but my teeth would probably want me to stop…so sweet! Thanks for sharing such a delicious dessert idea!

  11. Holy cow. I would love to send out an invitation to you right now. Hopefully, you’ll say to me, “Eh, I’ll bring the dessert.”

    For me, I always seem to end up bringing ALL the major dishes. Like 3-4 dishes, because the people I hang out with are miserable cooks and can only know how to assemble lettuce and carrots into a bowl and call it “salad”.

  12. those look freakin delicious. I love condensed milk too. We are super limited by what we can get in Africa for baking, so one popular thing is to just crush a packet of cookies into a greased tin, cut up a chocolate bar and throw that in there, and then empty a can of sweetened condensed milk all over it and then bake it. Simple. Delicious. Cannot wait to actually make something legit though like this :)
